Dominican Republic Chocolate ice cream
Olivier De Boissy, the creator of Chocolaterie de l’Opéra is a long time fanatic of chocolate. He was born in a family of chocolate and candy makers. He created Valrhona with his father during the 1970's. Then, following a new adventure, he created the Chocolaterie de l’Opéra with a simple but powerful idea: create chocolate for pure origin cocoa beans - which means focus on expressing the specific flavours of a specific bean coming from a specific ground rather than assembling beans from different places. This innovative idea has now been adopted by many chocolate producers but Chocolaterie de l'Opéra remains the most advanced in that field. Its Dominican Republic chocolate is a good example of a strong and fruity bean which is the basis for an intense and creamy chocolate ice cream.
